Well the Jordan shoes were unlocked by amount of time playing the game. If you had trouble beating the MJ Challenge. You could put a code in to unlock the My player Jordan mode. Which I think they will do here. Because people won't be able to play with their favorite teams.

How about with historic cameras/overlays/etc, if you play a game before the year 2000, your resolution instantly goes to SD

If you look at the trailer, when Dr. J stops the ball with his shoe, it says AllStar on the front. So, I don't think it would be too much trouble to create those 60's AllStars as well.
